South Pacific Spinach

A Westernized Island Bake


Ingredients

  • 1 10 oz bag of fresh spinach
  • 1 can coconut cream
  • 1 medium-sized onion, chopped
  • Himalayan pink salt to taste or salt of your choice

Steps

    Preheat oven to 350°F (177°C).

    In a 9x13 inch baking dish, layer spinach and then onions. Repeat until pan is full. It’s ok if it’s very full because the spinach will shrink.

    Sprinkle with salt.

    Add coconut cream.
  • 5

    Bake covered for 40 to 45 minutes.

Tips

The original native dish is called palusami and is normally made with taro leaves. Spinach, being much easier to find in western countries, makes a great substitute.
