Mini Crustless Quiches

Ingredients

  • 1 small onion, chopped
  • 3 cups broccoli, chopped
  • 1/4 cup water
  • 1 lb firm tofu
  • 1 Tbsp cornstarch
  • 1/4 cup nutritional yeast flakes
  • 1/2 tsp turmeric
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 3/4 tsp Himalayan pink salt or salt of your choice
  • 1/2 tsp kala namak (black salt)
  • 1 1/2 tsp aluminum-free baking powder
  • 2 Tbsps of your favorite plant-based milk

Steps

    Preheat oven to 350°F (or 177°C).

    Add onions and broccoli to a pan and sauté in water until softened.
  • 3

    Place the remainder of the ingredients in a food processor or high speed blender and process/ blend until smooth.

    In a bowl, combine tofu mixture and vegetables.

    Fill oiled muffin tins or a silicone cupcake mold to the top with the mixture.

    Bake for 25 to 27 minutes.

    Remove from the oven and let sit for 5 minutes before lifting from tins.
