Minestrone Soup

Tzatziki Sauce
Cool as a Cucumber
Ingredients
2 cups of your favorite plant-based sour cream- 1 cup cucumber, seeded and diced
- 2 Tbsps lemon juice
- 2 cloves of garlic, minced
- 2 Tbsps fresh dill, finely chopped
- Himalayan pink salt or salt of your choice to taste

Mix all ingredients together and refrigerate.
Tips
This is a great sauce to use as a topping or even a salad dressing if thinned out with a little water. It goes great as a sandwich spread or on top of falafels and even as a delicious vegetable dip.
