Pecan-Carob Chip Cookies

That’s One Smart Cookie!


Ingredients

  • 1 cup whole wheat flour
  • 1 cup whole wheat pastry flour
  • 2 1/2 tsps aluminum-free baking powder
  • 1/2 tsp Himalayan pink salt or salt of your choice
  • 1 cup coconut or turbinado (raw) sugar
  • 1 Tbsp blackstrap molasses
  • 1/2 cup coconut oil, melted
  • 6 Tbsps water
  • 1/3 cup creamy cashew or almond butter
  • 1 Tbsp vanilla flavoring
  • 1 cup carob chips
  • 1/2 cup pecans, chopped

    Preheat oven to 350°F (177°C).

    In a large bowl, mix together both types of flour, baking powder, and salt.

    In a separate bowl, mix together sugar, coconut oil, water, nut butter, and vanilla flavoring.

    Combine flour with wet ingredients.

    Mix in carob and nuts.

    Let cookie dough sit at room temperature for approximately 1 hour.

    Use a small cookie scoop to portion dough about 1 inch apart on an oiled or parchment paper-lined baking sheet.

    Bake for 12 to 15 minutes until golden brown.
