Noodles with Asian-Style Peanut Sauce

Ingredients

  • 1/2 lb rice noodles
  • 1 Tbsp sesame oil
  • 1/2 cup peanut butter
  • 1/2 can (13 ounces) coconut milk
  • 2 1/2 Tbsps Bragg Liquid Aminos
  • 1 tsp garlic, minced
  • 2 1/2 Tbsps lime juice
  • 1 Tbsp sesame oil
  • 1 Tbsp honey
  • 1 Tbsp ginger, grated
  • 1/2 cup cilantro, chopped
  • 1/2 tsp curry powder
  • 1/3 cup water
  • Chopped peanuts or cilantro, sliced green onion/ scallion or red pepper, or a lime cut in wedges for garnish.

Steps

    Cook noodles as directed on package.

    Drain and add back to pot.
  • 3

    Drizzle about 1 Tbsp of sesame oil to prevent sticking and to add some flavor.

    Add all sauce ingredients to a saucepan and whisk over medium heat until warm and well combined.

    Plate noodles.
  • 6

    Top with peanut sauce and garnish.
