1/4 tsp Himalayan pink salt or salt of your choice
1/4 tsp kala namak (black salt)
1/2 cup onion, chopped
1/4 cup green pepper, chopped
2 to 4 Tbsps water
1/4 cup tomatoes, diced
4 scallions or green onions, sliced, for garnish

Rinse tofu in cold water and drain.

In a large mixing bowl, mash tofu into chunks with a fork or potato masher.

Mix in seasonings except Taco Seasoning.

In a skillet on medium-high heat, sauté onion and pepper in water until softened. You may need to add additional water to prevent the vegetables from sticking.

Add tofu mixture to a skillet. Stir together on medium heat for 5 to 10 minutes.

When the consistency is like that of scrambled eggs, add diced tomatoes.

For a flavor boost, sprinkle a little bit of Taco Seasoning on top.

Garnish with scallions or green onions.
