Corn and Oat Waffles

Ingredients

  • 3 1/4 cups oats
  • 4 cups water
  • 3/4 cup grits or cornmeal
  • 2 Tbsps extra virgin olive oil (or 1/4 cup nuts)
  • 1 1/4 tsp Himalayan pink salt or salt of your choice
  • 3 Tbsps honey, pure maple syrup, or raw blue agave nectar (or 1/4 cup dates, chopped and softened in warm water)
  • 2 Tbsps vanilla or maple flavoring
  • 2 tsps aluminum-free baking powder (optional)
  • 2 TBSPS cornstarch

    Preheat waffle iron.

    Place all ingredients in a high speed blender and blend until smooth. This makes a thick waffle batter. If it’s too thick, add a bit of water to thin the consistency to make a more pourable batter.

    Cook waffles on a waffle iron until golden brown.

Tips

I like to pour this fruit sauce on top of pancakes, waffles, or desserts. For a smoother syrup, blend in a high speed blender until desired consistency is reached. Since this makes a good-sized batch, freeze any leftovers for another time. To reheat, simply defrost overnight in the refrigerator and warm up in a pot on the stove. If needed, add water to get a smoother and more pourable batch.
